Transitioning from an international business career to joining Claude Laval Corporation (LAKOS) in Fresno, Mendy assumed the role of President in 1998, focusing on company expansion. Concurrently, Mendy balanced professional commitments with personal milestones, marrying and raising a daughter while actively engaging in community service. Post-LAKOS sale in 2013, Mendy initiated the Pay it Forward Luncheon Series at Fresno State, promoting student-professional collaboration, and contributed to academia as an adjunct lecturer. Beyond academia, Mendy maintained a steadfast commitment to community service, holding trustee roles at Valley Children’s Hospital and engaging in various leadership positions in charitable organizations.
