The Mustang Cafe at Laton High School was created to support Special Education students in building customer service skills, gaining job experience, and developing habits that prepare them to be contributing members of their community. Students learn about the coffee business by creating drinks such as coffee, tea, sodas, and lemonades while building confidence and independence. The cafe operates during class time for instruction and training and after school through the Workability program for paid work experience. The program has expanded to include marketing and product development through new drink offerings, expanded recipes, and the Mustang Creations label for custom items such as apparel, bags, and keychains. As the program grows, student interest and initiative have increased significantly, with more students actively seeking training, asking questions, and expressing excitement about working in the cafe in the future.
